Toffee Brittle

Ingredients

  • 1 ½ cups caster or raw sugar

  • ½ cup Bowerbird Naturals finger limes & citrus

  • ¼ cup Bowerbird Naturals dried edible flowers

  • ¼ cup crushed macadamia nuts

Method

Step 1:

In a saucepan over low heat, stir sugar with a little water until fully dissolved (don’t bring to a boil yet!).


Step 2:

 Increase heat to high. If sugar crystals stick to the pan’s sides, brush them down with a wet pastry brush.


Step 3:

Bring to a boil and cook until the mixture turns a rich golden colour—be careful not to burn it!


Step 4:

 Just before removing from heat, stir in edible flowers, crushed nuts, and finger limes.


Step 5:

Remove from heat—the residual warmth will deepen the toffee’s colour.


Step 6:

Pour onto a lined tray, spread evenly, and let it cool until set.

Step 7:

Break into shards and enjoy!
